Domaine Sauvète
Domaine Sauvète is the work of four generations of Sauvètes. Jérôme’s Great-Grandfather Georges Sauvète planted the first vines in 1905. Roland and then Michael, the next two generations, went on to enlarge the vineyards in 1930 and 1975.
Jérome started working on the family domaine in 1980. In 1986 Dominique married Jèrôme and they have put all their passion and energy into building the domaine further. In 2013 the fifth generation of Sauvète, their daughter Mathilde, joined the team.
Great placement, rich diverse soils and the wise choice to farm organically (Ecocert certified) give their vineyards all they need to produce sumptuous wine. Today, the single goal of the family, and the estate is to produce authentic wines, those that express the subtleties of their terroir most completely.
The domaine is ideally located on the heights of the Toucheronde hillsides overlooking Cher, and on the plateau overhanging the village of Monthou-sur-Cher. They vineyards total 17 hectares, half are dedicated to white grapes (Sauvignon Blanc, Chenin Blanc, and Chardonnay) and half are devoted to (Gamay, Malbec, Cabernet and Pineau d’Aunis).
The vineyards have all the advantages they could. There’s an exceptional location, rich and varied soil, and just the right climate and sunshine. The lands devoted to white wine lies on the Mardelle and Bocagerie plateaux; windblown sands with argilo-siliceous subsoil. It’s ideal for Sauvignon Blanc. On the heights of the Sanuette and Rouère slopes, sandy surface soil rich in flint ensures the grapes come to full ripeness. The grapes for “Oneiros” are planted here giving them a delicate mineral character.
Red wines are produced from vines planted on the Toucheronde hillsides, which provide fine soil with a rich variety of stone, including flint perrons and spongestone. The vineyard has a breath-taking panoramic view over the Cher Valley. It’s southern exposure ensures rapid warming of the soil during the day. “Gravouille” and “Antéa” come from Toucheronde’s southwest slope – intense wines with an aroma of red fruits.
Each vintage is produced separately to best preserve the unique qualities of the vintage. The goal is to extract the wine’s full potential gently and naturally. The result are wines with the natural taste of the grapes. This is the best approach for wines that express the very best of the diverse terroir of the estate.
